Creamy Chocolate Mint Gummies

Recipe Ingredients: 
4 Tablespoons Vital Proteins Beef Gelatin
1/2 cup cold water
2 cups canned coconut cream
1/4 cup unrefined coconut oil (I like Tropical Traditions Gold)
1/2 cups raw cacao powder
1 teaspoon peppermint extract (omit if you don't like mint)
1 teaspoon vanilla extract
1/8 teaspoon sea salt
Chocolate stevia drops to taste (I like SweetLeat Sweet Drops)
Recipe Instructions: 
Pour cold water into a small bowl and stir in gelatin. Set aside for 3-5 minutes for gelatin to absorb water.
Add remaining ingredients except stevia to a medium saucepan and stir constantly over medium heat until mixture is smooth.
Lower heat slightly and add the gelatin, stirring until it is totally dissolved and mixture is creamy and smooth.
Remove from heat, sweeten to taste with the chocolate stevia drops, transfer to a measuring cup with spout for easier pouring, and pour gently into silicone candy molds or a glass baking dish.
Refrigerate until solid, about 1-2 hours for small molds or 3 hours for a glass dish. Release from molds or cut into squares and serve. Store in the refrigerator for up to a week for best texture, they will harden if kept longer. Enjoy!
