Vacation Trip to Iceland!

 

On May 18th, my husband Pedro and I will be leaving for a vacation trip to Iceland!  This is our second visit there, as we went there six years ago to see our friends in Reykjavik (former residents of Punta Gorda!) and also explored the area of the Western Fiords, which proved too inhospitable for the Vikings and Is now an incredible bird and wildlife sanctuary.  

On this visit we plan to travel to the Eastern side of the island, home to incredible waterfalls, glaciers and volcanoes (including the one that erupted shortly before our last trip there).  Since this area is fairly remote, I won't be able to keep up with the weekly newsletter so the one I am sending on May 15th will cover my absence until May 29th.  We plan to do some hiking and whale-watching and take many pictures.  It's chilly there even in May, average highs in the 40's and  lows in the low 30's, perfect for hiking.  Iceland is breathtakingly beautiful and the people are friendly, so if you enjoy adventure travel we highly recommend that you consider a visit there.

Iceland has one of the healthiest cuisines we have encountered on our travels.  It is based upon only the freshest seafood, meats and produce, and the restaurants pride themselves on the healthfulness and traditional preparation of their menus.  We saw neither processed food nor junk food on our last visit; I can only hope that this trend continues.  Every restaurant we visited fit the description of what we would call "a health food restaurant".  Even the airport calls itself "The World's Healthiest Airport", and well deserves the title, presenting an amazing variety of wholesome fresh foods!
